Wold Top Ebb & Flow Barrel Aged Beer

Swell
Swell is a dark beer brewed specifically for barrel-aging, the recipe developed to hold the flavours from the casks without being overwhelmed. It’s rich, fruity and full of flavour.

The beer has spent 11 months in a combination of casks from the Spirit of Yorkshire, each of which had previously held maturing spirit from the distillery, including a PX (Pedro Ximenez) cask which is extremely rare in the world of barrel-aging, an STR red wine cask and last but not least bourbon casks from the Distillery Project 003 Maturing Malt.

Swell is the first in the Ebb and Flow series of barrel-aged beers from Wold Top Brewery. Future releases will explore different styles of beer, matured in different whisky cask types, all coming from the Spirit of Yorkshire Distillery.

Crest
Crest is the third in our Ebb and Flow series of beers aged in ex-whisky casks from the Spirit of Yorkshire Distillery.

This time we’ve taken Landmark Lager and aged it in Filey Bay whisky casks for a little over 12 months to produce, Crest! The lightness of the lager, with its notes of honey and fresh herbs, takes the smooth and creamy vanilla notes from the Filey Bay Flagship casks, to create a delicious, fresh-tasting beer with aromas of green apples and a gentle, warming flavour.

At 7.9% this is a very easy drinking barrel aged beer, ideal for late summer evenings enjoyed with friends around the fire pit. This beer is also certified Gluten Free and is vegan friendly.

Barrel Wave
Barrel Wave is the second release of the Ebb & Flow series of barrel-aged beers in collaboration with our sister company, Wold Top Brewery.

Rather than brewing an original beer (as we did with the first barrel-aged beer, Swell) for this bottling we’ve taken one of our most popular and well-known beers, Scarborough Fair IPA, and aged it in Spirit of Yorkshire whisky casks for 8 months.

Using Filey Bay whisky casks the beer has matured and developed over those months to give a beautifully rounded, smooth full-bodied taste where hints of soft citrus fruits and hoppy bitter notes marry with the light, creamy, vanilla flavours from the Filey Bay whisky.
At 9.1% abv it’s not a beer for every day, much like a good dram of whisky it’s one to savour and sip!
