For the third of our annual autumn Filey Bay Sherry Cask Reserve series, Whisky Director Joe married together five Fino casks from the warehouse, three which were filled with our Pot distillate, and 2 which held our lighter column distillate.

Honeycomb & Toffee

Made from palomino grapes, Fino sherry is naturally light, dry and delicate. During maturation, the heavier and oilier nature of our more traditional pot distillate really took on the spicy, ginger notes of these casks, whilst the fruitier, lighter nature of our unique column distillate let the sweet, honey flavours sing. It’s a fantastic complement to our distillery and it’s long been a favourite of the team.
